Garlic-Butter Mushrooms

Ingredients:

2 tablespoons unsalted butter, divided 1 tablespoon extra-virgin

olive oil

1 pound mixed mushrooms, quartered or cut into sixths if large

½ teaspoon ground pepper

¼ teaspoon salt

3 cloves garlic, minced

1 tablespoon chopped fresh flat-leaf parsley


Directions:

  1. Heat 1 tablespoon butter and oil in a large skillet over medium-high heat. Add mushrooms, pepper and salt; cook, stirring, until cooked through and starting to brown, 15-20 minutes.

  2. Reduce heat to medium. Stir in garlic and the remaining 1 tablespoon butter. Cook until the garlic is softened, 1 to 2 minutes more.

  3. Remove from heat and stir in parsley.
