Lion's Mane Scramble

Ingredietns:

4 Eggs

3 oz. Fresh Lion's Mane Mushrooms (sliced into ¼ in. strips)

2 tbsp. Fresh chives

2 tbsp. Parmesan cheese

1 tbsp. Old Bay Seasoning

¼ c. Plain Greek Yogurt

2 tbsp. Butter

*Pinch of Garlic 

*Pinch of Salt

*Pinch of Black pepper

Servings: 2

Step 1:

Whisk together eggs, parmesan, ½ tbsp of Old Bay seasoning, yogurt, salt and pepper. Set aside.

Step 2:

In a 10 in. frying pan, melt butter on medium high heat. Add Lion's Mane. Season Lion's Mane with remaining Old Bay and garlic. Add 1 tbsp of Chives. Cook until golden brown.

Step 3:

Reduce heat to medium low. Add egg mixture. Let the egg bottom set (roughly 1 minute) and then begin stirring the cooked egg into the uncooked egg until the eggs are fully cooked. Top servings with remaining chives.
