Mushroom Gravy

Ingredients:

1 lb Oyster mushrooms

¼ C. Butter (can use oil or butter alternative)

¼ C. All Purpose Flour

1 qt. Stock (beef stock preferably, any stock will work)

1 tbsp Dried Thyme

2 cloves Garlic Minced 

1 tbsp Parsley

Salt and Pepper to taste


Step 1:

 Slice mushrooms into ¼ in. thick strips. Melt butter in a saucepan set at medium/high heat. Once melted, add mushrooms and garlic to the pan. Add a pinch of salt and pepper to the mushrooms. Cook mushrooms until all the water has been cooked out of them and evaporated. This should take roughly 15 to 20 minutes depending on moisture content.


Step 2:

Stir in the flour, stir and cook for about 5 minutes. Add a quarter of the stock to the pan and stir vigorously until fully incorporated. Add remaining stock and the remaining ingredients. Stir until fully mixed and then reduce heat to medium low and reduce for roughly 30 minutes. Finish with more salt and pepper if need be.
